Maple Salmon with Chilli Noodles

This delicious dish features succulent salmon fillets coated in our Hook Line and Sinker seasoning, served over a bed of flavourful chilli noodles and tender stem broccoli. It's a quick and satisfying meal that's sure to please!

ingredients

  • 2-3 salmon fillets (deskinned)
  • Hook Line & Sinker seasoning
  • 3 spring onions, sliced
  • 3 garlic cloves, sliced
  • 2 red chillis, sliced
  • Tenderstem broccoli, trimmed
  • 3 nests of egg noodles
  • Sesame oil
  • Soy sauce
  • Hot honey
  • Chives, for garnish
  • Chilli flakes (optional)

Directions

  1. Preheat the oven or BBQ to 180°C and put a pan of water on to boil for the noodles.
  2. Cut the salmon into equal-sized cubes and place them in a bowl. Season with Hook Line & Sinker seasoning, ensuring all pieces are evenly coated.
  3. Spread the seasoned salmon on a tray and place it in the oven. Cook for around 20 minutes, or until the internal temperature reaches 65°C.
  4. Once the water is boiling, add the egg noodles and cook according to the package instructions until tender. Drain and set aside.
  5. In a wok or large pan, heat a splash of oil over medium-high heat. Add the trimmed tenderstem broccoli and stir-fry for a few minutes until slightly tender.
  6. Add the sliced garlic, spring onions, and chillis to the pan, continuing to stir-fry for another minute.
  7. Add the drained noodles to the vegetable mixture, tossing to combine. Drizzle with soy sauce and sesame oil for added flavour.
  8. Plate the noodles in bowls and top with the cooked salmon. Drizzle with hot honey and garnish with chives and chilli flakes, if desired.
