Montreal Smash Burger with Filthy Mayo

We all love a burger now and then. How do you make it even better? Add some filthy bacon mayo to the top!

We're not clowning 🤡 around with this Whopp-ingly big and tasty double stacker 🍔

In fact our buns were so loaded with meat, cheese and mayo - we forgot to leave room for the salad 😉

ingredients

  • 2 X 4oz beef balls, preferably chuck steak minced
  • Montréal Seasoning
  • Brioche buns, toasted 
  • Two slices of American cheese 
  • 2 teaspoons of Bovril beef
  • Tomato Ketchup 20g
  • 1 Tsp Fools Gold
  • Heaped Table Spoon Crispy Onions
  • 50g Bacon Lardons or Pancetta (cooked)
  • 30g Mayo
  • Cheese Slices x 2

Directions

FOR THE FILTHY MAYO

  1. Cook up the Bacon lardons if not already cooked and seat aside to cool
  2. Mix together the Fools Gold, Mayo, Ketchup and Crispy Onions
  3. Add the cooled pancetta or lardons and set aside

FOR THE SMASH BURGERS

  1. Get your pan smoking hot
  2. Smash each Pattie into the hot pan. Brush with bovril and sprinkle with Montreal rub
  3. Flip, brush with bovril and season
  4. Top with cheese. Stack the parties
  5. Spoon on the filthy mayo and top with crown of the bun. Then steam under a cloche.
  6. Pop on the heal of the bun after 30 seconds or so
  7. We recommend at least 2 napkins for this, it’s filthy!
