Nigerian Beef Suya

Our African nut-free Suya - Like it Spicy? seasoning brings a lip smacking oomph to this Nigerian Beef Suya dish. Paired with a super tasty Jollof rice and served with limes and coriander, it’s a flavour packed treat for busy weeks.

For the Suya Skewers:

  • 2 tbsp Suya - Like It Spicy? seasoning
  • 2 tbsp oil
  • 500g beef sirloin, thinly sliced
  • Wooden skewers (soaked in water for 30 minutes)

For the Spicy Jollof Rice:

  • 1 large onion, finely chopped
  • 1 red pepper, diced
  • 1 red chilli, thinly sliced
  • 2 tomatoes, sliced and diced
  • 3 tbsp tomato paste
  • 2 tsp Suya - Like It Spicy? seasoning
  • 2 cups long grain rice
  • 2 cups chicken stock

To garnish:

  • Fresh parsley or coriander
  • Lemon or lime wedges

Directions

  1. In a bowl, combine the oil with the Suya – Like It Spicy? seasoning. Add the sliced beef to the bowl and toss to coat. Place in the fridge for half an hour to let the flavours settle into the meat.
  2. Thread the marinated beef onto the soaked skewers.
  3. Preheat a pan over medium-high heat and grill the skewers for 4-6 minutes on each side, until the beef is nicely charred.
  4. Remove the skewers from the heat and set aside on a warm plate, covered with foil.
  5. In the same pan with the meat juices, add the chopped onion, pepper and chilli, stir fry until softened, then add the tomato paste, tomatoes and Suya – Like it Spicy? seasoning.
  6. Add the rice to the pan and stir to coat the grains in the sauce. Pour in the chicken stock, stir, and bring to a gentle boil.
  7. Reduce the heat to low, cover and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
  8. Place the Spicy Jollof Rice on a large serving dish and arrange the grilled Beef Suya Skewers on top, scattering with some extra seasoning if you like. Garnish with herbs and serve.
