Original Greek Gyros

Nothing beats a big phat Greek gyros! Bring a taste of the Mediterranean breeze to your backyard gatherings or turn any family dinner into something unforgettable! Served with warm pita, crispy fries, juicy tomato, onion, and a creamy yogurt dip. A feast that can be enjoyed wrapped up or piled high on a plate.

For the gyros:

  • 1 kg pork butt
  • 1 kg pork belly
  • 1 cup Big Phat Greek seasoning
  • 2 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice

For the dip:

  • 2 cups Greek yogurt
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • ½ cup chopped dill
  • 4 tbsp Angus & Oink Garlic Butter

Directions

  • Slice the pork into very thin, even pieces.
  • In a large bowl, mix the meat with olive oil, vinegar, lemon juice, and seasoning. Marinate for 1 hour.
  • Stick the meat tightly onto a rotisserie spit, spike or skewer to form a cone shape. For stability, you can cap both ends with onion halves.
  • Cook on a charcoal or gas grill over high heat, or in an oven preheated to 200 °C. Roast for about 45 minutes, then slice off the crisp outer layer. Continue roasting on the same temperature and slicing every 30 minutes. Each serving should be crispy on the outside and juicy inside.
  • Mix all the yogurt dip ingredients until smooth. Serve alongside the gyros with pita bread, fries, tomato, and onion, or use them to make a pita wrap.
