Rubba Rubba Succotash

This recipe is our own interpretation of this uniquely American dish. A great healthy side dish, we adapted to ingredients readily available to us in the UK, with great results! It's a beautifully vibrant dish, that pops with all the flavour of our Mr Rubba Rubba seasoning! We are sure many of our other seasonings would taste great too so why not mix it up a bit!

Succotash originated from Narragansett Native Americans living in the area now known as Rhode Island. The name is derived from the Narragansett word sohquttahhash, which means 'broken corn kernels'

ingredients

  • 25g butter
  • Splash of vegetable oil 
  • Yellow pepper - diced 
  • 175 g of cherry tomatoes 
  • 165 g of sweetcorn 
  • 2 tsp of Rubba Rubba
  • 125g of frozen broad beans or frozen soya beans.
  • One medium onion sliced
  • Three cloves of garlic, minced 
  • A few sprigs of lemon thyme 
  • Salt
  • Pepper
  • Chopped basil
  • Squeeze of half a lemon to finish

Directions

  1. Heat your butter and oil in a pan
  2. Add the onion and soften down
  3. Next add your garlic, thyme, peppers and cookout for a few more minutes.
  4. Add in your tomatoes, sweetcorn and broad beans or soybeans along with the Rubba Rubba seasoning
  5. Cook for another 3-4 minutes
  6. Remove from heat season to taste and finish with a squeeze of lemon juice and your basil.
