Satay Chicken

Succulent and sweet, with a hit of spice - satay chicken is a win for any day of the week - especially when it’s made with our punchy Satay All Day Seasoning. Serve with crunchy, colourful toppings, with fluffy rice on the side to soak up that creamy sauce.

ingredients

For the chicken: 

  • 450g boneless chicken thighs, cut into chunks
  • 2 heaped tbsp Satay All Day Seasoning
  • 2 tbsp soy sauce
  • 160ml Coconut cream

 

For the satay sauce: 

  • 400ml creamy coconut milk
  • 2 heaped tbsp smooth peanut butter
  • 1 tbsp fish sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp Satay All Day Seasoning 
  • Juice of 1 lime

To serve: chilli flakes, pickled cucumbers, chopped roasted peanuts, sesame seeds, coriander.

Directions

  1. In a bowl mix together the soy sauce, coconut cream and satay seasoning, add the chicken pieces, cover and place in the fridge for at least 1 hour (preferably overnight) 
  2. Thread the marinated chicken onto skewers and cook in a hot pan with some oil. Cook for around 10-12 minutes until nicely browned on all sides and the juices are running clear. 
  3. Make the satay sauce: add the coconut milk, peanut butter, fish sauce, soy sauce and satay seasoning to a small pan. Heat gently, whisking constantly until you get a smooth sauce, then add the lime juice. 
  4. Serve the skewers on one big plate with the satay sauce and scattered toppings to finish. Garnish with extra coriander and dive on in!
