Shawarma Lamb Shoulder

Lamb loaded with our Shawarma spice, braised low ‘n’ slow, finished with herbs and olives. Four hours well spent.

ingredients

  • 2kg Lamb Shoulder, Bone In
  • 7 Onions, halved
  • 2 Cans Chickpeas
  • 2 Tins Peaches in Juice
  • 2 Tbsp Shawarma Seasoning
  • 2 Whole Garlic Bulbs, halved
  • 700ml Chicken and Lamb Stock
  • 1 Tbsp Balsamic Vinegar  
  • Salt and Pepper

 To Garnish:

  • Coriander
  • Mint
  • Olives

Directions

  1. Preheat oven to 165°C.
  2. Season lamb with salt, pepper and 1 Tbsp Shawarma seasoning.
  3. Mix stock with 1 Tbsp Shawarma seasoning and balsamic vinegar.
  4. Add all ingredients to a deep roasting dish and top with lamb.
  5. Cook for approximately 4 hours, covering with foil after about 1.5 hours.
  6. Remove and top with chopped herbs and olives.
