Smoked Salmon Breakfast Rolls

A fabulously easy dish that the kids can get involved making. This is going to make the ultimate Mothers Day breakfast fit for the Queen of your house!

 

ingredients

  • 1 Roll of Puff Pastry
  • 1 Pack of Smoked Salmon
  • 1 pack of Cream Cheese
  • 1 Courgette
  • 1 Egg
  • Bunch of Dill
  • Lemon Zest
  • Lemon Pepper Seasoning
  • Ranch Seasoning
  • Yuzu
  • Butter

Directions

  1. Open up the Puff Pastry and with a pasty cutter, mark out 3 strips and cut. 
  2. Spread over the cream cheese and sprinkle across the whole pastry sheet with Angus and Oink Ranch Seasoning
  3. Using a mandolin or thinly slice a courgette long ways and soak in yuzu for a few minutes or lemon juice.
  4. Place courgette strips along the edge of each strip and add freshly chopped dill. 
  5. Add smoked salmon on top of the courgette and then using Angus and Oink Lemon Pepper Seasoning shake all over the salmon and add Lemon Zest. 
  6. Fold over the pasty to make a pocket and roll into a spiral 🌀 stand up and pop into muffin pan, brush with beaten egg yolk. 
  7. Bake in an oven or bbq at 200C for 30-35 minutes or until golden brown. 
  8. Melt butter and add in 3tbs of Yuzu and chopped dill. Additionally you can add Lemon Pepper Seasoning into the butter
  9. Once baked brush with Yuzu Butter and Enjoy.  Can be eaten hot or cold perfect with a mimosa!
