Suya Beef Skewers & Flatbread

Does serving African flavoured beef on Turkish style flatbreads make this fusion? Who cares, it's tasty and quick to make. Try it, you'll like it!

ingredients

  • 400g thick cut sirloin steak
  • 25ml oil
  • 20g Suya-Like it Spicy African seasoning

TO SERVE

  • 1/3 red onion sliced
  • 2 tomatoes sliced
  • 1/3 cucumber sliced
  • 1/3 white cabbage sliced
  • Small bunch of parsley chopped
  • 2 turkish style flat breads
  • Phat Taco Sauce

Directions

  1. Slice steak into thin strips approx. 5mm thick. Top tip; pop your steak into the freezer for 30 mins prior to slicing, this really helps.
  2. Pour oil and seasoning into a mixing bowl and give it a mix up to form a thin paste.  Chuck in your steak slices and give them a really good mix to ensure all covered evenly.  Thread steak onto skewers pearcing each slice twice to create a “U” shape”.  Don’t pack the slices too close together to ensure quick and even cooking – use 4 skewers if needed.  Pop in the fridge for 30 mins to marinate.
  3. Prepare BBQ for high heat or Oven grill on high.  These will cook quickly and will only need 2-3 mins each side.  Cook until the edges of the meat have picked up some colour.
  4. Serve on flat breads with cabbage, red onion, tomatoes and cucumber with a good sprinkle of parsley over the top.  A drizzle of phat taco sauce or some Aioli would make a great accompaniment.
