Suya Cheese and Potato Bread

This is a great recipe for using leftovers and convenient If you buy ready-made pizza dough, let’s get into it.

ingredients

  • One pack of ready-made pizza dough, or indeed make your own
  • Leftover potatoes, these can be roast potatoes, boiled potatoes or even mashed potatoes
  • Cheddar cheese, crumbled into big blocks, or small, blocks or grated
  • Suya Seasoning - about 2 teaspoons or as much as you care for the spicy and the better we say
  • Sliced red onion, preferably pickled.
  • Melted butter, with a pinch of dried oregano and 1 tsp of suya.

Directions

  1. Preheat your oven to 220°C
  2. Roll out about 80g of dough into a ball and flatten out with a rolling pin
  3. Take a table spoon of the potato and cheese mix, placing it in the centre of the dough
  4. Top with sliced pickled red onion. Bring the edges of the dough up and bring together, pinching them together so you form a rough seal
  5. Place seal side down and loosely roll out with rolling pin
  6. Turn over and repeat
  7. Brush with oil, place on a baking tray
  8. Bake for 12-14 mins.
  9. Once cool brush with the herby melted butter and sprinkle with extra suya and top with extra pickled red onions
