Swordfish & Roti

Traditionally served with shark meat and called Shark & Bate in Maracas Bay, Trinidad. We have adapted this to use swordfish, but you could use tilapia or any firm white fish. Crispy fish on warm rotis with a boom bang tang fresh salsa!!

ingredients

Fish:

  • 0.5kg of swordfish fillets
  • 3 cloves garlic sliced and minced
  • 3 tbsp mother in laws tongue sauce
  • 1 cup plain flour

3 tsp exodust jerk seasoning

Mother in laws tongue:

  • 30g chopped chives
  • 60g fresh coriander
  • 1 tsp salt
  • 1 lime juiced
  • 1 hot pepper (habanero)
  • Or 2 tbsp of Voodoo Mango sauce

1/2 tsp of black pepper

For the roti:

  • 2 cups plain flour
  • 2 tbsp baking powder
  • 1 tsp sea salt
  • 1 cup warm water
  • Olive oil

Directions

  • First of all get the breads going! Mix the flour, baking powder, and salt with a whisk in a large bowl. Add the warm water combine with flour softly and form into a soft ball. Do not knead! Rest for 20 minutes. 
  • Turn out onto floured surface and divide into 4. Roll each portion into a ball but don’t overwork. Roll out the balls to 1/4 inch thick and sprinkle with flour.
  • Make a cut half way into the centre of the circle and roll the left side around onto the right side to form a cone.
  • Fold the cone over from the thin onto the thick end and reform a ball.
  • Set aside to rest for 20 minutes. Roll the ball into 1/8 inch thick discs and place on hot cast iron pan.
  • Brush with oil and flip immediately and brush the other side. Flip until the rotis are puffed.
  • For the sauce, chop ingredients roughly and add to a food processor and blitz. You can make this as hot as you like by adding chilli. 
  • Place fish in a bowl and add the lime juice, Mother in Laws Tongue and minced garlic. Leave an hour in the fridge. Mix flour and Exodust in a bowl and dredge the fish to cover in the flour mix. Heat oil in a frying pan and submerge fish to fry until golden brown.
  • Serve the fish with the warm roti and spoonfuls of Mother in Laws Tongue for bite and freshness!!
