Pull-apart perfection! This feast is made for every festive occasion or an indulgent Sunday shared with friends and family. Tender, smoky beef that melts in your mouth. marinated with Angus & Oink Black Gold seasoning and finished with a glossy Dirty Barbie glaze.

  • 1 whole bone-in beef shank
  • 2 cups Angus & Oink Black Gold seasoning
  • 1 cup Angus & Oink Dirty Barbie sauce
  • ½ cup water or soda
  • ½ stick of butter

Directions

  1. Using a sharp knife, carve the meat into a hammer shape. Shave off the top to expose the bone, creating the look of a hammer handle.
  2. Remove the silverskin around the meat, then tie it firmly with butcher’s twine to keep the meat attached to the bone and maintain its shape during cooking.
  3. Use a touch of Angus & Oink Dirty Barbie sauce as a binder, then coat generously with Angus & Oink Black Gold seasoning, making sure every edge is covered.
  4. Set your smoker, grill, or oven to 110°C and cook for 8 hours. Spritz the meat with water or soda every hour for the first 3 hours to keep it moist.
  5. After 8 hours, remove from the heat, glaze with Dirty Barbie sauce, add the butter on top, and wrap tightly in parchment or butcher paper.
  6. Increase the temperature to 135°C and continue cooking for another 4 hours, or until the meat is tender enough to pull apart.
  7. Let it rest in a warm spot for about 1 hour before serving.
  8. Pull the beef off the bone and serve in sliders, or pair it with garlic cornbread, sweet potato fries, and roasted pumpkin for the ultimate festive feast.
