Voodoo Chicken Fries

Scary stuff. Sweet, nasty, delicious. Our Mango hot sauce is a pure taste of Trinidadian street food with all of the kick of scotch bonnet chillis and the fragrant sweetness of ripe, juicy mango. We’ve paired it here with the crispiest chicken thighs, chips and some awesome quick-pickled onions. Lose your voodoo virginity, quick.

ingredients

  • 6 Chicken thighs
  • ½ bottle Voodoo Mango Sauce
  • 1 tbsp Fries With That seasoning
  • 1 kg chips - oven are fine, chip pan better!
  • 1 red onion
  • 1 Lime
  • 100ml Mayo

Directions

  1. Bone out your chicken thighs but leave the skin on. Season with salt and lay skin side down on a BBQ plancha or in a heavy frying pan on medium heat. 
  2. Slice the red onion as thinly as you can and squeeze over the juice of the lime and add a pinch of salt. Massage with your fingers for a few seconds and set aside. 
  3. Cook the chicken until the skin is completely dehydrated, golden and crisp - the chicken should be almost cooked all the way through. 
  4. With the chicken still skin side down pour over some Voodoo Sauce and flip over for the last 5 minutes. 
  5. Remove from the plancha and set aside. Cook your chips.
  6. Cut each thigh into 4 pieces and toss in a little more Voodoo Sauce. Season the chips with the Fries with That seasoning and add the chicken.
  7. Dress with the mayo, and pickled red onion and any herbs that you have lying around. Finish with another shake of Voodoo Hot Sauce.
