This wonderful, citrus smoke is great for fish (of course), pork and poultry. If you marinate beef in a citrus-based liquid, Orange smoke just layers another citrus taste on top of it.  If you smoke skinless chicken breast, the meat will have a distinct orangey, caramel color.
