Barbecue Feather Duster Chicken Ciabatta

Smoky BBQ chicken coated in Feather Duster, finished with a light sriracha glaze and stacked into a toasted ciabatta with peppery greens and pickled onions. Sweet heat, fresh crunch and proper grill flavour in every bite.

  • 2 ciabatta rolls
  • 2 chicken breasts
  • 2 tbsp Angus & Oink Feather Duster
  • 1 tbsp sunflower oil
  • 4 tbsp sriracha mayo
  • 2 tbsp garlic mayo
  • a handful of rocket and watercress
  • 2 tbsp pickled red onion

Directions

  1. Light your barbecue for indirect cooking, aiming for a steady medium heat.
  2. Coat the chicken breasts lightly in sunflower oil, then season evenly on all sides with Angus & Oink Feather Duster. Place the chicken on the grill over indirect heat and cook with the lid down for around 20
    minutes, turning occasionally, until cooked through and the internal temperature reaches 74°C.
  3. In the final few minutes of cooking, brush the chicken generously with sriracha mayo, allowing it to lightly glaze without burning. Remove from the grill and rest for 5 minutes before slicing.
  4. Split and lightly toast the ciabatta rolls on the barbecue until golden and crisp at the edges. Spread the base of each roll with garlic mayo, then pile on the sliced glazed chicken. Top with rocket and watercress, scatter over the pickled red onion, and finish with an extra drizzle of sriracha mayo.
