Crispy Air Fried Chicken

A simple, balanced dinner with plenty of protein and plenty of flavour. Pigasus chicken quarters, air fried until the skin is crisp, served with sweet potato mash and a fresh, crunchy salad. Straightforward ingredients, no fuss, and a solid high protein meal for any night of the week.

Chicken

  • 2 chicken quarters
  • Pigasus seasoning

Sweet Potato Mash

  • 1 large sweet potato
  • Salt
  • Olive oil or butter, optional

Salad

  • Lettuce
  • Celery
  • Cucumber
  • Plum tomatoes
  • Apple cider vinegar
  • Low-fat salad cream

Directions

Chicken

  1. Season 2 chicken quarters generously with Angus & Oink Pigasus.
  2. Air fry at 180°C for 40 minutes.
  3. Flip halfway through cooking.
  4. Finish with the skin facing up for the second half to crisp the skin. 

Sweet Potato Mash

  1. Peel and chop the sweet potato.
  2. Steam until very soft.
  3. Mash with salt.
  4. Optional: add a little olive oil or butter for extra flavour.

Salad

  1. Combine chopped lettuce, celery, cucumber, and plum tomatoes.
  2. Add a splash of apple cider vinegar and a spoon of low-fat salad cream.
  3. Toss well and serve.

Feeding two? Double everything. Keep the chicken in a single layer in the air fryer, cooking in two batches if it gets crowded, since piled-up quarters steam instead of crisp.
