Korean Seoul Food Burger

Juicy pork gets a bold blast of Seoul Food Seasoning: a punchy fusion of paprika, sesame, ginger, and chilli that channels the fire of Korean BBQ straight into your bun. Layer it up with tangy kimchi, mayo, and a toasted sesame bun, and you’ve got a burger with serious Seoul!

ingredients

For the Burger Patties:

  • 500g pork mince
  • 1 tbsp Seoul Food Seasoning
  • 2 garlic cloves, minced
  • 2 spring onions, finely chopped

For the Kimchi Slaw:

  • 100g kimchi, finely chopped
  • 1 cup shredded white cabbage
  • 1 small carrot, julienned
  • 1 spring onion, thinly sliced
  • 2 tbsp mayo
  • 1 tsp rice vinegar or lime juice
  • ½ tsp Seoul Food Seasoning

For Assembly:

  • 4 sesame-topped burger buns, lightly toasted
  • Pickled cucumber
  • Toasted sesame seeds
  • Fresh coriander
  • 100g mature cheddar
  • 1 tbsp Seoul Seasoning

Directions

  1. In a bowl, combine the mince with Seoul Food seasoning, garlic and spring onion. Shape into 4 equal patties and chill in the fridge whilst you prep the slaw. 
  2. In a bowl, mix chopped kimchi, cabbage, carrot, spring onion, mayo, rice vinegar and seasoning. Cover and place in the fridge.
  3. Grill, pan-fry, or BBQ the patties over medium-high heat for 3–4 minutes per side or until just cooked through.
  4. Mix the grated cheddar with the Seoul seasoning and melt into the burgers for the final minute of cooking.
  5. Brush the buns with oil and toast until golden. Place the bottom of the buns on a tray, top with mayo, cucumber, burger, kimchi slaw and a generous drizzle of Red Dawg hot sauce.
