Suya Chicken Kebabs

Fancy something a bit different? West African food is ready for the big time - this spice mix is heady and fragrant and the perfect partner to chicken and charcoal. We’ve pimped up a tomato sauce to go with our chicken skewers and garnished the lot with roast peanuts and coriander.

ingredients

  • 8 Chicken thighs, skinned and boned
  • 2 tbsp Suya seasoning
  • 1 Lime
  • 1 tin of tomatoes
  • 2 tbsp sugar
  • 3 garlic cloves
  • 2 tbsp peanuts
  • 1 bunch coriander

Directions

  1. Cut each thigh into 4 and marinade in lime juice and Suya seasoning. Thread onto skewers. 
  2. Slice the garlic and fry in a pan with a little oil. When soft add the sugar, tomato and suya and simmer for 30 minutes. 
  3. Meanwhile grill the kebabs on your barbecue until caramelised and cooked all the way through. Season with extra Suya to taste (I used loads….)
  4. Chop up the peanuts and coriander and mix with a good pinch of Suya. Serve the chicken on a flat bread and smother with tomato sauce and peanuts.
