Tacos Al Pastor

At the epicentre of Tacoville lies Tacos Al Pastor!! One of the defining flavour combinations of Mexicana cookery. Here we have created this epic recipe using our own seasonings and sauces, click the recipe below to print!

ingredients

  • We used a small pork butt here, but you can use pork steaks or neck fillets and build up layers of meat. Size the meat for as many as you need to feed, this can feed a lot!!
  • A&O Mexican rub.
  • Pineapple juice.
  • 1 whole pineapple
  • A whole bunch of tacos
  • Salsa roja
  • Hot Sauce (Red Dawg)
  • Fresh Coriander
  • Lime juice

Directions

  • We cooked this on our rotisserie attachment to skewer the meat and pineapple. You can add rub to the meat while its spinning, just moisten with the pineapple juice spray.

  • YOU CAN DO THIS WITHOUT A ROTISSERIE. Either smoke a pork joint or even grilled pork steaks would work fine!!

  • Half fill the charcoal baskets and add some little chunks of wood for added colour and flavour. Initially shut the lid and get the wood smoke into the pork. Keep an eye on the colour and remove the lid if its getting too dark.

  • If the pineapple gets too dark wrap it in tin foil to protect it.

  • Cook the pork to 185-200ºF internal and slice rather than pull for shreds of smoky goodness.
