Thai Turkey Curry

This epic Thai Curry packs bold flavours with each bite thanks to the A&O Thai Rub and is very easy to make. The rich Thai spices season the turkey beautifully and works well with all poultry. The addition of coconut milk enhances the curry to form a truly rich creamy sauce, bringing the taste of Thailand straight to your kitchen. A real crowd pleasure.

  • 1kg, turkey breast, sliced
  • 400ml Coconut milk
  • 250ml Chicken Stock
  • 4 Spring Onions, sliced
  • 3 tbsp Angus & Oink Thai Rub
  • 2 Red & Green Bell Peppers, sliced
  • 2 Garlic Cloves, minced
  • 2 tbsp, Fresh Thai Basil, finely chopped
  • 1 Brown Onion, sliced
  • 1 Red Chilli, sliced or minced
  • Rice, approx. 60g per person
  • 2 tbsp Vegetable Oil

Directions

  1. Place a wok or deep pan over a high heat and add the vegetable oil. Slice the peppers and onion then transfer to the pan, reduce heat and let them soften before adding the minced garlic.
  2. Slice the turkey breast into strips and add to the pan. Cook until lightly browned then add 1 tbsp Angus & Oink Thai Rub. Mix everything together then pour in the stock and coconut milk then let it simmer for 20 minutes, stirring occasionally.
  3. Cook the rice as per guidelines, transfer to a pan to keep warm until serving.
  4. As soon as the sauce has thickened, remove the pan from the heat. Stir in the freshly chopped Thai Basil and serve immediately.
  5. Garnish with sliced Spring Onions and Red Chilli, serve with rice and sides of choice.

Tip: If the sauce isn’t as thick as you would like, make a cornflour slurry using cornflour and water then gradually stir into the sauce.
