Big Phat Greek Stacked Skewers

Bit different, bit mad, but trust the process. These slap. Layers of tortilla and Big Phat Greek seasoned beef and pork, stacked like a lasagne, skewered and grilled until the edges go crispy and the middle stays soft. Honestly, just try it.

ingredients

  • 1 pack tortillas
  • 500g minced beef
  • 500g minced pork
  • 1 heaped tbsp Big Phat Greek Seasoning
  • 1 tsp minced garlic
  • Handful of chopped parsley
  • Salt and black pepper
  • Peppers (red, yellow and orange), cut into chunks

For the baste

  • Olive oil
  • Honey
  • A pinch of Big Phat Greek Seasoning

To serve

  • Sriracha mayo

Directions

  1. Mix the beef, pork, finely diced peppers, Big Phat Greek, garlic, parsley, salt and pepper in a large bowl until properly combined.
  2. Slice the stack into equal squares like a grid, then push a skewer through each stack.
  3. Lay one tortilla down and spread a thin, even layer of the meat mix right to the edges. Top with another tortilla and repeat. About 6 layers works nicely.

  5. Whisk together the oil, honey and a pinch of Big Phat Greek for the baste.
  6. Cook over medium heat, turning regularly and brushing with the baste as they go. You're looking for crispy edges, a golden outside and a soft middle (75°C in the centre), almost a meaty lasagne vibe.
  7. Finish with Sriracha mayo. No regrets.
