Loaded Baked Potato with Hot Honey Garlic Fries

A spud of epic proportions - this, friends, is your gateway to potato heaven. We double bake the potato with a glorious mix of gooey cheeses, shredded chicken and bacon with Sweet Bones & Butts powering up the flavour. We then top the whole shebang with a generous handful of Hot Honey Garlic Fries. It’s indulgence on a whole new level.

  • 2 large baking potatoes
  • Oil for cooking/frying
  • Sea Salt
  • 1 breast of chicken - poached and shredded
  • 500g mix of cheeses - cream cheese, grated cheddar & mozzarella
  • 3 heaped tbsps sour cream
  • 1 tbsp Sweet Bones & Butts
  • 5 rashers of streaky bacon, chopped and cooked until crispy
  • 200g french fries (a large handful per potato)
  • 1.5 tbsp Hot Honey Garlic
  • 1 heaped tbsp mayo 
  • Chives

Directions

  1. Heat oven to 200C/180C fan. Rub the potatoes with oil and sea salt, wrap with baking paper and bake in the oven for about 1.5 hours, until the skins are dark, golden and crispy and the potato is fluffy inside. 
  2. Unwrap the foil and allow to cool slightly before slicing open and scooping out the inside of the soft potato (leave the skins intact on the tray)
  3. Add the scooped out potato to a bowl with the shredded chicken, cheeses, 1 tbsp sour cream Sweet Bones & Butts and a handful of bacon (reserving some for the top of the fries). Mix together and stuff into the empty jacket skins. Top with a little extra mozzarella and place back in the oven for a further 10 minutes until melted and bubbling. 
  4. Heat some oil in a deep pan and deep fry the chips until crispy and golden. Drain on some kitchen towel, place in a bowl and toss in 1 tbsp of the Hot Honey Garlic, shaking to ensure an even spread of seasoning. 
  5. Place the cooked cheesy jackets on a plate, top each one with a dollop of sour cream, the remaining crispy bacon and a handful of chopped chives. Stack the fries on top and dive on in!
