Tomahawk & Bottarga Baguette Bites

Get ready for an elevated bbq experience! Premium feel in every bite of these baguettes. Black gold seasoning, bottarga truffle oil and tomahawk steak!

ingredients

  • 1 large tomahawk steak
  • 1/4 cup Angus & Oink Black Gold
  • 1 stick of bottarga (or any cured fish roe)
  • 4 fermented black garlic heads (or roasted garlic if you can’t find any)
  • 1/4 cup truffle olive oil
  • 12 mini baguettes 
  • A few arugula leaves

Directions

  1. Season the steak with a gentle sprinkle of Angus and oink black gold
  2. Preheat your grill at 140C and grill indirectly for about 20-30 minutes or to your desired doneness 
  3. Give your steak a sizzle on hot fire from both sides for that right black gold crust 
  4. Let the meat rest and slice against the grain into thin slices
  5. Meanwhile, heat up the Mini baguettes and slice the bottarga in even thinner pieces 
  6. Assemble the baguettes with a drizzle of truffle oil, a dash of black or roasted garlic, a few arugula leaves, a couple of tomahawk slices and garnish with the bottarga on top.
  7. Share with your friends and enjoy a bougie appetizer!
