The beans and seasoning can be switched out for whichever you have in the cupboard, try Kidney beans or change our the seasoning for Harissa or Shawarma seasoning!
Ingredients

500g potatoes, washed and thinly sliced

400g Chickpeas

150g spinach
-
2Onions, sliced

2 Tsp vegetable stock powder

2 Tsp Baharat Seasoning
- 15g butter, melted
- 2 tbsp olive oil

320ml Water - Boiled
Directions
Preheat your oven to 180°C
Add the oil to a large pan, on a medium setting
Add the onions, and fry for around 10 minutes, stirring frequently. Add the Baharat seasoning
Now add the Chickpeas and Boiling Water
Bring the whole lot to the boil and then leave to simmer for approx 10 minutes
Meanwhile get the water boiling for the potatoes, add the potatoes and cook for 1 minute
Drain the water from potatoes
Stir the Spinach into the Chickpea mix until wilted
Take and ovenproof dish, add the chickpea mix to it
Add half the potatoes to the Chickpea mix
Then mix a little more Baharat Seasoning in with the melted butter
Paint the potatoes with the butter mix and then repeat for a top layer
Bake for 1 hour until the potatoes are crispy and brown!
