A fabulous vegetarian dish using our deliciously warm spiced Baharat blend. This adds a delicious depth of flavour to the dish.
Ingredients
- 1 Butternut squash, sliced lengthways, seeds removed.
- 100ml olive oil

2tbs Baharat rub
- 1tsp garlic puree
- 1tsp ginger puree
- 100g feta cheese

Handful of raisins
- Handful of tasted pine nuts
- Bunch of mint and coriander.
Directions
Preheat the oven to 180ºc
Carefully slice each half of the squash horizontally, about 80% through the squash, do this as many times as possible!
Combine the Baharat, ginger and garlic with the oil to form a paste
Liberally coat the squash
Place on a baking tray, in the centre of your oven and cook for 45 mins to an hour
Once cooked garnish with raisins, feta and serve on a bed of salad leaves, mint and coriander
