This beautiful butter basted chicken is take up to the next level with the addition of our Garlic Butter Seasoning. This would also work really well with your Christmas Turkey.
Ingredients

1 Whole Chicken
- 250g of melted Butter
- 100g of Spanish Dry Sherry/ Dry White Wine

4tbs Garlic Butter Seasoning
- 4 Cloves of Garlic
- Lemon 🍋
- Sprigs of Thyme
- 1tsp of dried Tarragon
- Bunch of Sage
- Sprigs of Rosemary
- Sprinkle Red Pepper Corns
- 4 Bay Leafs
Directions
Slather chicken with butter and sprinkle over A&O Garlic Butter and allow to marinate for an hour.
Place handfuls of herbs inside the chicken along with a cut lemon and truss the bird at the legs.
Melt butter and add more of Herbs, Garlic, Pepper Corns, Bay Leafs, 4tbs of A&O seasoning and Sherry and slowly gently heat to infuse together. Leave to infuse for at least 1 hour prior to using
In a Cast Iron Pan place your chicken in and slowly pour the liquid over and poach gently for an hour and half. If smoking on a bbq add in citrus wood at the start of the cook for added smoked flavour.

Please cook Chicken/Turkey according to guidelines, aiming for an internal temp of 75C
