An absolute showstopper of a starter for any Asian feast. Here we've used our Miso Ramen seasoning but you could change this up to make a butter to match the cuisine you're cooking!
Ingredients

Good Quality scallops and shells (amount will depend on number of people and serving size)
- 250g salted butter, softened.

2tbsp of Miso Ramen Noods broth, plus extra for seasoning.
- 1 chilli, deseeded and chopped.
- Lime, zest and juice.
- Chilli or dry roasted peanuts, crushed.
Directions
Combine the butter and miso rub and using parchment paper form a sausage shape and freeze.
Remove scallops from shells and clean both well. Place to one side
Preheat your grill to max, and place clean scallop shells on a baking tray or suitable pan
Place shells under the grill until they become searingly hot. You can also do this on a BBQ and place shells directly onto hot coals
Once shells and as hot as the sun, place you cleaned scallop in the shell (roe on or off, up to you), with a small disc of butter on top and place under grill/in bbq
Turning after a min or so, or when internal hits 46ºc
Top with extra butter and remove from heat
Garnish with lime zest, chilli and peanuts.
