A fabulously festive treat. All the flavours of Christmas with some gorgeous mince pies, topped with some pineapple rum infused pineapple and chunks of fudge!
We know Christmas is a busy time for everyone so we did this recipe with some shop bought pastry and mince meat filling, and it tasted epic!

Ingredients
- Mince pie meat

Fresh Pineapple
- Short crust pastry 1 roll makes 6-8 pies

Skulduggery Pineapple Rum 1 Tblsp
- Crumbly vanilla fudge

1 Egg Yolk

Icing Sugar if you have it!
Directions
The night before prep the Pineapple and splash the rum over it and leave over night to infuse - maybe two splashes since its Christmas!
- Remove and pat dry. Keeping any excess liquid, combine it with the mincemeat.
- Preheat oven to 180°c
- Unroll shortcrust cut 6 circles and 6 slightly smaller circles, (mince pie tops) the size of your mince pie tin.
- Spoon in the mince to fill 3 quarters , the fill remaining with the macerated pineapple and crumble a little fudge on top. Wet the edges of the pie crust and push the top into place, lightly sealing. Brush with egg yolk, dust well with icing sugar and cut a little hole in the top for any steam.
Place in the oven for 22-25 minutes. Once cooked, remove and leave in the tin for 5mins before transferring to a cooling rack.
- Eat.
