4 Chicken Breast Fillets

2 Cups Buttermilk

Garlic Butter Seasoning

2 Cups Breadcrumbs
-
200g Salted Butter
-
4 Garlic Cloves
-
1 Lemon - Juiced
-
Fresh Parsley
-
Chunky Chips
-
Rocket
For Serving
Directions
- Place your chicken breast between two pieces of cling film and pound enthusiastically with a rolling pin.
- Season well with super addictive Angus & Oink garlic butter seasoning and cover with buttermilk.
- Leave to marinade in the fridge while you’re sloggin’ at work or for 6-10 hours.
Double dunk in breadcrumbs & leave to rest on a baking sheet while the oven heats up to 200oC.
- Drink a cold beer 🍺
- Bake in the oven for 18-20 minutes or until crisp and golden, turning over half way through.
- While cooking, knock up your garlic butter sauce:
- - melt 200g of salted butter in a pan - add 4 finely diced cloves of garlic (careful not to burn) - add a good squeeze of fresh lemon & a handful of fresh parsley (adding some finely diced chilli here works really well too 🌶️)
- Generously drizzle over your crunchy, garlic butter schnitzel & serve with chunky chips & rocket 🚀
