Thai Mussels with Tom Yum Fries

Wham Bam what a huge explosion of flavours for one plate! A perfect dish for the weekend, to be shared and enjoyed with a chilled beverage or two!
Our fragrant Thai flavours work so well with the mussels and the amazing flavours in our Miso Ramen do something rather amazing to the fries!
Ingredients
- 1KG of best quality live Mussels

1.5 tbsp of Thai Rub You Long time
- 1 can of coconut milk
- 1 tbsp Fish Sauce
- Juice of 2 limes
- Chopped chilli
- 1 crushed and chopped lemon grass
- Thumb size piece of chopped ginger
- Bunch of coriander, chopped fine
- Two big handfuls of your favourite oven/airfryer ready fries
- 1tbs Tom Yum Foods rub
- Juice of 1 lime
- Good pinch of flaky sea salt.
- Half tbsp of oil.

For The Thai Mussels
In a heavy bottom pan (ideally cast iron with a lid), high heat, fry off half of the chilli, ginger, lemongrass. For 2 mins
Then add the coconut milk, Thai rub and fish sauce
Bring to the boil
Add the mussels, gently mix then place the lid on the pan and leave for approx 5mins or until all of the mussels are open, discarding any that refuse to open
Remove from heat, add the remaing chilli, ginger, lemon grass and the lime juice.
Serve With Tom Yum Fries
For The Tom Yum Fries - Get these started first!
Cook your fries for 7 mins at 200ºc.
Remove and place in a big bowl
Season with oil, Tom yum and the juice of a lime, pinch of sea salt and toss thoroughly.
Return to oven/airfryer for 8 mins at 210ºc.
