Sweet bones and Butts rub (about 2-3 tablespoons)

Baby Pangang BBQ sauce

30g muesli

3 Eating apples

1 tablespoon of Chinese takeaway rub.
- 25 g of salted butter
- A pinch of sea salt flakes
- 25 g of brown sugar

For The Ribs
- 1. **Prep the Ribs:**
First, take a look at your rack of ribs. Sometimes there's a membrane on the back. If you see it, peel it off for better flavor penetration.
Season the ribs generously with your SBB rub Don't be shy; ribs love flavor!
- 2. **Fire Up the Grill:**
Get your barbecue grill going. You want a medium heat, around 120-140°C (250-275°F). If you're using charcoal, set up a two-zone fire with coals on one side for indirect grilling.
- 3. **Indirect Grilling:**
Place your seasoned ribs on the grill away from the direct heat. You're aiming for slow and steady cooking here, so no need to rush.
- 4. **Maintain the Heat:**
Close the lid and let the ribs cook for about 3-4 hours. Every 30 minutes or so, check the temperature and add a handful of soaked wood chips for that smoky goodness. You want the internal temperature of the ribs to reach around 93-107°C (200-225°F).
- 5. **The Baby Panang BBQ Sauce Touch:**
In the last 30 minutes of cooking, start brushing on your favorite BBQ sauce. Let it caramelize and create that mouthwatering glaze.
