A deliciously sweet treat to end the BBQ!
Ingredients

1 Tbsp Honey Chilli Seasoning
- 100ml rum
-
2 Tbsp light brown soft sugar
-
¼ Tsp ground nutmeg
-
¼ Tsp ground allspice
-
¼ Tsp ground cinnamon
-
200ml Crème fraîche
-
2 Limes, zested and juiced
-
1 Pineapple, peeled and cut into 4 wedges
-
1 Med hot red chilli
Directions
Firstly Let's Get The Glaze Made! 🍯
Make your glaze by heating the rum in a small pan over a low heat with 50ml water and stir in the sugar until it dissolves
Turn the heat up to medium and bring to the boil
Boil for 2-3 mins until the mixture thickens slightly
Remove from the heat and add Honey chilli seasoning
In a separate bowl mix the Creme Fraiche with the lim zest and set aside until serving time!
For the Pineapple
Preheat BBQ to med high
Slice Pineapple lengthways, coat with a neutral oil, dust with Honey Chilli Seasoning and grill
Whilst grilling brush the flesh of the Pineapple with the glaze, turning every so often until a dark golden brown and the pineapple is soft.
Remove from grill, finish with another dusting of the Honey Chilli seasoning, more lime zest and the chopped chilli
Serve with the Creme Fraiche, or Ice Cream if you prefer!
