What is Panuozzo?
Panuozzo was originally an Italian street food from Campania and it's almost a pizza sandwich that can be filled with cheese, meat, vegetables and awesome seasonings! The great thing is that for the bread you can simply take your regular pizza dough, bake it “naked” and then it rises in the oven like a pillow because the dough is not weighted (similar to a Pita). And you have an airy bun, which you can fill with all kinds of goodies!

What is Panuozzo?

And you have an airy bun, which you can fill with all kinds of goodies!
Ingredients
- 500 g of strong, white flour

290 ml of lukewarm water
-
7 g of fast acting yeast
- 1 teaspoon of salt

1.5 teaspoons of Italian stallion
- 100g ricotta
-
Italian ham of your choosing, we used Parma ham but mortadella would work beautifully.
- Rocket salad leaves
- Olive oil for drizzling
- Salt and pepper for seasoning.
Directions
- Combined the flour and salt and mix well
- Combine the lukewarm water and yeast, mix well, and leave for 10 minutes
This works great in a food mixer with a dough hook. Combine the wet and dry ingredients and mix on a medium slow for 7 to 10 minutes. Transfer to a warm place for at least an hour until it’s doubled in size.
- Divide you dough into your desired size, this recipe makes 4-5 decent size pizza balls.
- Divide into individual balls of dough, cover and leave to rise once more for 25mins or so.
- Meanwhile combine the ricotta and Italian stallion rub, with a drizzle of olive oil. Set aside.
- Pre-heat your pizza oven or standard oven to as hot as it can go.
- Roll out your pizza dough go online and watch Videos on this loads of techniques find the one that works for you. And fold neatly in half.
- Transfer to your oven, turning occasionally until puffy and cooked and slightly blistered on the sides.
- Remove an open up like a sandwich drizzle with all of oil and salt and pepper. Start with a layer of rocket and a lovely folded layer of ham then smother with your ricotta mixture.
- Eat immediately as one whole pizza, or divide and share if that’s your sort of thing. Lush.
