An awesome take on the usual meat ribs, great for a meat free Monday, a snack or an awesome side dish! The corn really takes on the flavour of the rub so well, and if you can why not pop them on the BBQ and add an awesome layer of smoke to the flavour profile too!
Ingredients

6 Cobs of Corn

Olive Oil - enough to drizzle corn

1 Tbsp Mexican Seasoning

50g Mayo
-
1 Lime (Zested & Juiced)
Directions
Cut Corn Cobs in half horizontally and then slice lengthways - each cob makes 8 ribs
In a bowl cover corn with a drizzle of oil and 1 tbsp of Mexican seasoning and mix well
Grill on medium high grill until slightly blackened - 10-15 minutes
Return Corn to the mixing bowl and toss through with the mayo, lime zest and juice, you could even add another sprinkle of seasoning here too!
Recipe Note
Why not change out the mayo for some sprinkles of cheese and coriander, or some hot honey and feta?
