Ingredients
- Beef skirt steak
- 200g Guanciale

Shawarma Seasoning
- Salt, pepper
- 1tbs olive oil
- For shawarma:
- 4 Pitas
- Cup of Pickled onions
- 4 Pickled chillies
- 1 Lettuce, chopped.
- 2 Tomato, sliced.
- 150g yogurt
- ½ cucumber
- Handful mint, chopped.
- Salt, pepper
Tzatziki sauce
Directions
Set up your grill for direct grilling. Heat up to 200C.
- Make tzatziki sauce. The soft part is taken out from the cucumber and then grated. Mix all the ingredients. Set in the fridge to rest.
- Rub steak with olive oil and Angus&Oink Shawarma rub. place sliced guanciale on the steak. Rolled the steak in to roll and slice it into 30cm cubes. Put on metal skewers.
Place a skewer with meat on it. Grill and turn over time to time, until 55C internal. When is done, set a side, cover with foil, let it rest for 10min.
- Place pitas on the grill to heat up for a couple minutes each side. Build shawarma in order: pita, lettuce, tomato, pickled onion, grilled meat, tzatziki sauce and pickled chilli.
