Directions
For The Pastry
Put all Pastry ingredients (except the water) in a food processor and tap the pulse button to slowly incorporate the butter into the flour
Add ice-cold water bit by bit and knead with hands into the dough until it forms a playdoh texture (try not to handle too much)
Cover the pastry and place in the fridge while you create the beef filling
For The Filling
Put the onions and scotch bonnet in a pan with a drop of oil and cook until soft.
Once soft add in your beef mince or preferred filling and cook until browned.
When browned add in the exodus and browning and mix thoroughly. For an extra kick add some rampant angus.
Add in the beef stock and flour mix well again taste test and let simmer for 10-15 mins until it has thickened.
When thickened up take off the heat to cool completely
Pre heat an oven to 160c (fan)
Roll out your dough to around 3mm thick and using a suitable bowl cut out 15cm circles.
Fill your cut outs with the filling and fold over using water to stick together crimping down with a fork and don’t forget to add vent holes on the top.
Place on greaseproof paper on a baking sheet and cook for 25 mins before placing onto a cooling rack.
Then sit back with a glass of skulduggery tucking into a patty wishing you were on a beach on the island.
