Moroccan inspired Lamb Tagine
This mouth-watering Lamb Tagine was created by our friend and Brand Ambassador Rob Claydon.
A delicious dish for the whole family and really easy to put together for a speedy supper. Perfect cosy comfort food for the autumn weather.
What you will need:
1 kg boneless diced lamb
1 Tsp salt
720 ml chicken stock
200g dried apricots, sliced
1 large onion, diced
1tsp @verylazyfooduk garlic
1tsp @verylazyfooduk ginger
2 tbsp. tomato paste
1 tbsp of ras el hanout kicking harissa seasoning
1 tbsp of flaked almonds
1 tbsp chopped fresh coriander
What you need to do:
- Brown your diced lamb in a suitable casserole dish or tagine being careful not to overcrowd the pan - this is where you get even more flavour added to the dish and we want to brown the meat, and not stew the meat.
- Fry the chopped onions until starting to soften, then add the remaining ingredients and combine well.
- Simmer gently on the hob or transfer to a low oven, until lamb is tender and can be cut with a spoon.
- Garnish with flaked almonds and chopped coriander.
Picture shows serving suggestion of turmeric and buttered cauliflower rice, but can be enjoyed with fluffy white rice, cous cous or mashed potatoes.
