
The Ultimate Short Rib Pastrami Bagel!
We love Pastrami and we love Beef Short Ribs, imagine a world where both of these collide! Well yesterday at HQ we made that happen! Dubbed the most delicious thing some of our team members have eaten, we decided this was just too good not to share!
First up we put our short ribs into our Pastrami cure (we used the cure as per pack instructions and deducted 20% off the meat weight for the bones), we then left it to do it's thing in the refrigerator for 5 days! After the 5 days we rinsed off the cure and left it to rest for 2 days!
Once cured we fired up the Pro Q Excel and added some Oak Wood Chunks and let it smoke away in there for a good 5-6 hours (these felt like long hours as the smells coming out of that smoker were unreal), we also gave it a shake of our Pastrami Rub too!
Once the ribs were done, we took them out and sliced them up, served them on a lightly toasted bagel, with some pickles, slaw, mustard and a swiss cheese slice!
